Brick Restaurant Ovens


With a Catamount brick oven, you can produce reliable, consistent results that are hard to match using other wood burning ovens. Catamount brick ovens are in the best restaurants throughout New England.

This oven, in Lui Lui Restaurant in Nashua, New Hampshire, boasts a decorative tile arch. Inside vegetables roast in pans, typically done when firing up the oven in the morning before it's at maximum heat (the top of the dome reaches between 1,600 to 1,800 degrees F, and the hearth is about 700 to 900 degrees F.). This 8' diameter oven can cook about 10 to 12 14" diameter pizzas in 3½ to 4 minutes.

At right, this distinctive oven is for Lui Lui's sister restaurant, located in West Lebanon, New Hampshire. It's 7' in diameter.
Another pizza oven, in Laney's in Manchester, Vermont. It, too, is 5' in diameter but with a stucco dome. These ovens are so well insulated they don't significantly heat up the room.
