Brick Restaurant Ovens
This oven, in Lui Lui Restaurant in Nashua, New Hampshire, boasts a decorative tile arch. Inside vegetables roast in pans, typically done when firing up the oven in the morning before it's at maximum heat (the top of the dome reaches between 1,600 to 1,800 degrees F, and the hearth is about 700 to 900 degrees F.). This 8' diameter oven can cook about 10 to 12 14" diameter pizzas in 3½ to 4 minutes. |
